Chef Ruth Bakery started as a habit: making the cake myself, for my family first, then for friends of friends. At some point the household oven stopped being enough.
I now work to order only. My week is built around the dates already booked, which caps how many cakes I can take but leaves me the time to do things properly: a ganache whipped the night before, an icing smoothed that morning, flowers placed at the last minute.
Most of my orders are birthdays, and that suits me. There is something about delivering a cake that will end up in every photograph of the day, and knowing it has to be worth it.

Nothing comes out of a freezer. What you receive was finished in the hours before.
Less sweet
Sugar serves texture and structure, not just taste. A slice should be finishable.
One date at a time
A limited number of orders each week, so that none of them is rushed.
